Fried Chickpeas
I first had Fried Chickpeas at a fabulous Tapas bar in New York City. I was pleasantly surprised that chickpeas – a food I ate all the time in the form of hummus or on salads, could be totally exciting when friend in a little olive oil and tossed with some salt and pepper. Serve this alongside the rest of your party nuts, your guests will gobble them up.
Mediterranean Eggplant Dip
Considering the simple ingredients involved in this recipe, you’ll be surprised by the complex taste. This easy, fresh and healthy dip is perfect for parties, sandwiches and first courses. I like to serve it with fresh hummus and cubes of feta cheese.

Quinoa and Fava Bean Salad with Honey Lime Dressing
This delicious salad is perfect for a healthy appetizer. It also makes a great light meal when paired with some crusty French bread and a wedge of cheese.
Caramelized Apple Bruschetta
Rachel Perdue, founder of Wild Pomegranate Kosher Concierge, is an adventuress in the kitchen. This is her take on the traditional Rosh Hashanah dish, apples dipped in honey, and it’s sure to start your meal off on a sweet note! It also works wonderfully as an appetizer for meals eaten in the Sukkah.
You can prepare the apple mixture one day ahead and keep it covered in the refrigerator. You can also prepare the toasted baguettes one day ahead and keep them in a zip-top bag. Before serving, microwave the apple mixture for 3 minutes or warm it in a saucepan on the stovetop for 5 minutes. Spread the honey on the baguette slices and then add a spoonful of warm apple bruschetta to each slice and sprinkle with cinnamon.

Roasted Red Pepper Dip with Jicama Sticks
Jicama is one of the great, semi-undiscovered vegetables. It’s available yearround, tastes terrific raw, and is ideal for cooking because it absorbs the flavors of the ingredients it’s combined with. It has a texture similar to that of a water chestnut (crunchy and wet), and a mild taste, like a less-sweet apple or pear.
The spicy Roasted Red Pepper dip is the perfect complement to the jicama. It is creamy, rich, and has a nice little kick that is balanced by the cool, light crunch of the jicama. This combination is perfect for parties (jicama doesn’t discolor while sitting out in the air) and it’s great as a different kind of side dish.
Chunky Guacamole
This is one of my favorite recipes to prepare because it's so easy, delicious and relatively healthy! While guacamole is not very forgiving of being made too far in advance, there are ways to naturally preserve its freshness and delay the effects of oxidation on the avocado (see my note at the end of the recipe).
