Caramelized Apple Bruschetta

Rachel Perdue, founder of Wild Pomegranate Kosher Concierge, is an adventuress in the kitchen. This is her take on the traditional Rosh Hashanah dish, apples dipped in honey, and it’s sure to start your meal off on a sweet note! It also works wonderfully as an appetizer for meals eaten in the Sukkah.
You can prepare the apple mixture one day ahead and keep it covered in the refrigerator. You can also prepare the toasted baguettes one day ahead and keep them in a zip-top bag. Before serving, microwave the apple mixture for 3 minutes or warm it in a saucepan on the stovetop for 5 minutes. Spread the honey on the baguette slices and then add a spoonful of warm apple bruschetta to each slice and sprinkle with cinnamon.

- 4 tablespoon(s) margarine or butter
- 4 tablespoon(s) olive oil
- 5 apples, peeled, cored, and diced into half-inch cubes (red or green apples)
- 4 tablespoon(s) sugar
- 1 large or 2 small baguettes, cut into half-inch slices
- 2 tablespoon(s) honey (plain, flavored or creamed)
- 1 teaspoon(s) cinnamon
1. Preheat oven to 350 degrees.
2. Warm a large sauté pan over low heat. Add margarine and olive oil.
3. Once the margarine and olive oil are very hot (3-5 minutes), add the apple pieces. Cook until tender, about 10 minutes.
4. Add the sugar and cook for another 10 minutes. Stir frequently with a wooden spoon so that the apples begin to break up and caramelize. Take care that the sugar doesn’t burn.
5. While apples are cooking, lay the baguette slices on the foil-lined cookie sheet. Place the sheet in the oven for 10 minutes until the baguette slices are lightly toasted (be careful not to let them burn). Remove the baguette slices from the oven and allow them to cool.
6. Carefully drizzle a small amount of honey over the bread. If you are using creamed honey, spread a thin layer of it over each slice.
7. Place a spoonful of apple bruschetta on top of the honey and top with a small sprinkle of cinnamon.
