Fava Bean Puree on Roasted Garlic Crostini

The fava bean is a wonderfully flexible and healthy vegetable that lends itself to all sorts of dishes. It is wonderful in salads, pureed for soups and low-carb dips, thrown into chili, mixed into creamy risottos and pasta dishes or as a complement to a tangy chicken or fish dish. Their buttery texture complements refreshing flavors, such as lemon and herbs, as well as rich, earthy flavors, such as mushrooms and cheese.
Here’s an easy recipe to get you started on your path to enjoying the fava bean! Enjoy these crostini as an appetizer or as a side dish for meat or fish.

- 1/2 cup(s) extra virgin olive oil
- 1 tablespoon(s) extra virgin olive oil
- 1 cup(s) peeled and cooked fava beans
- 1 tablespoon(s) freshly squeezed lemon juice
- 1 teaspoon(s) freshly ground black pepper
- 1 baguette or loaf of crusty y bread, sliced in 1/2 inch slices
- 1/4 cup(s) parmesean cheese (optional)
1. Preheat oven to 400 degrees.
2. Place the garlic cloves in the center of a sheet of aluminum foil and drizzle with a tablespoon of olive oil. Wrap the cloves in foil and bake for 45 minutes or until the cloves are soft. Allow garlic to cool and then gently squeeze the soft garlic out of the skins. Set aside.
4. In the meantime, prepare the fava beans. Open the pods by pulling on the stem and gently pushing the pod open with your fingers. Pop the beans out.
5. Cook beans in boiling salted water for 3–5 minutes. Plunge them into ice cold water so that they keep their pretty green color. Using the tip of your knife or your fingernail, pop the bean out of the skin.
6. Puree the fava beans in a food processor or blender with the kosher salt, pepper and lemon juice. Taste for seasoning.
7. To prepare crostini, toast the bread in the oven for 10–12 minutes. Gently spread some roasted garlic on each crostini and top with a spoonful of fava bean puree.
Optional but delicious: sprinkle with fresh parmesan cheese.
