Chicken Fit for a Queen (and her Kindgdom)
This sweet, succulent chicken is infused with apricot jam and sherry. The jam bakes to a glistening finish, creating an entrée that’s fit for a queen! But this dish is so easy to prepare, it will feel at home on anyone’s table. Pair it with Jeweled Rice and Simple Roasted Asparagus for a truly majestic meal.
You can also prepare a lower fat version of this dish with skinless chicken breasts. Marinate the chicken pieces in the sauce for at least two hours, then bake the chicken for 25—30 minutes (depending on the thickness of the meat), basting occasionally.
Rosemary Chicken with Apples and Onions
This is a wonderful fall dish, and it's perfect for a warm Shabbat lunch or a two-day holiday. The chicken and onions become sweet from the juice of the apples and the meat just falls off the bone after the long cooking time.
There is very little fat in this recipe and you can remove the skin from the chicken for an even healthier dish. Serve this dish with easy rice pilaf from the box and a steamed green vegetable for a healthy and filling meal.
